Pour 4 à 6 personnes Ingrédients : 250 g de farine levure de boulanger 1 c. à café de sel 1/4 litre d'eau (environ) huile (pour la friture) Préparation : Mélanger la farine avec le sel, la levure diluée dans de l'eau chaude, puis avec de l'eau que l'on rajoute progressivement et que l'on pétrit (le mieux est d'utiliser un pétrin électrique). Il faut rajouter de l'eau jusqu'à obtenir la consistance d'une pâte semi-liquide, visqueuse. Faire chauffer l'huile jusqu'à ce qu'elle soit fumante. Verser alors des morceaux de pâte que l'on prend avec une cuillère et que l'on repousse avec une autre cuillère. Laisser dorer. (Normalement on utilise ses doigts : on prend un morceau de pâte de la taille d'un oeuf, que l'on tient avec les doigts des deux mains et on étire progressivement pour faire presque un anneau puis qu'on dépose dans l'huile). Egoutter et tremper dans le sirop de sucre. On peut aussi les manger salées ou alors saupoudrées de sucre ou encore nature.

TCHICHA (Soupe de blé)

Ingrédients : 1 oignon 1 pincées de safran 1 pincée de poudre de piment doux 150 g de blé concassé 2 cuil á soupe d'huile d'olive 2 cuile á café de coriandre hachée Sel, poivre 2 litre d'eau Photo pas encore disponible Préparation : Dans une marmite assez grande porter á ébullition 2 litre et demi d'eau. Y ajouter le safran préalablement dilué dans un petit verre d'eau chaude durant 10 minutes, le piment doux et l'oignon finement coupé, l'huile d'olive te le blé concassé, le sel et le poivre. Laisser mijoter encore á petit feu durant une heure. Un quart d'heure avant de servir ajouter la coriandre hachée. Servir á chaud.

Ingrédients: 1 gras double de mouton, 1 ghernourg (ou frissure), 1 tranche de viande de mouton, 3 bouquets de coriandre, 2 poignées de pois chiches trempés la veille, 1 poignée de riz, 1 piment, 1 belle tête d'ail, 5 cuillères à soupe de paprika, 1 cuillère à café de sel, 1 cuillère à café de poivre noir, ¼ de cuillère a café de carvi, 1,500 kg De petits pois, 1,500 kg d'artichauts, 1 citron. Instructions: Pour nettoyer les tripes, procéder de la manière suivante : mettre dans une bassine de l'eau bouillante, puis retirer tous les boyaux se trouvant à l'intérieur des tripes, rincer celles-ci à l'eau bouillante, laisser quelques instants seulement (sinon les tripes se saisissent et l'on ne pourra plus les gratter), retirer les tripes de l'eau, les mettre sur une planchette, gratter au couteau toute la surface (ce procédé permet de débarrasser les tripes de tous leurs déchets et d'obtenir des tripes propres et blanches), laver de nouveau à plusieurs eaux chaudes, débarrasser tous les intestins de leurs déchets et graisse. Les fendre au milieu pour laver les parois intérieures, les rincer à plusieurs eaux chaudes, puis mettre-le tout à égoutter, ensuite couper les tripes en morceaux de 15 cm de longueurs et 10 cm de largeur environ, les coudres les une après les autres en laissant une ouverture de façon à confectionner des poches, puis laisser en attente. D'autre part, laver les poumons et couper en petits dés, puis faire blanchir 10 minutes, les rafraîchir à l'eau froide et laisser égoutter, réduire en petits dés également le cœur entier (sauf la partie graisseuse), une partie du foie, ainsi que tous les intestins et la tranche de viande, mettre ce hachis dans un récipient creux, ajouter l'huile, les pois chiches, le riz rincé, une partie du poumon (garder le restant pour un autre usage). Faire derssa, la verser sur le mélange saupoudrer de 2 bouquets de coriandre hachés et de paprika, amalgamer le tout. Remplir de cette farce les poches et coudre l'ouverture, puis piquer le dessus avec une aiguille, les disposer dans une cocotte, recouvrir largement d'eau. Faire cuire 1 heure. Entre-temps, écosser et laver les petits pois, nettoyer les artichauts en ôtant les pieds et feuilles ainsi que le foin, les passer au citron, puis rincer, couper en deux. A mi-cuisson des tripes, disposer les légumes sur les poches, continuer la cuisson 30 minutes, vérifier l'assaisonnement. En fin de cuisson semer la surface de coriandre coupée finement, éteindre aussitôt.

Boulettes au cumin

Ingrédients:

- 6 morceaux de gigot désossé .

- 1 petit oignon.

- 1dl d’huile soit 1 verre à thé.

- 20g de beurre ou de Smen.* - Sel, poivre noir. - Cannelle. - 1 oeuf. - 100g d’amandes mondées. Pour les boulettes :

- 500g de gigot de mouton hachée.

- 1 cuillère de cumin en grains. - 5 gousses d’ail. - 1 pincée de graines d’anis vert. - 1 pincée de cannelle. - 1 pincée de poivre noir. Temps de préparation : 35 minutes Cuisson : 1 heure Commencer par faire revenir la viande en morceaux avec l’oignon râpé dans le beurre, l'huile, le sel, le poivre et la cannelle. Piler les condiments et mettre une première moitié en la mélangeant avec le hachis et ajouter l’autre moitié dans une marmite. Remuer le tout et couvrir d’un demi litre d’eau, plonger les amandes et cuire au moins 40 minutes. D’autre part, faire des boulettes avec la viande hachée, la cannelle, le poivre, l’anis et l’oeuf. Les plonger dans la sauce et cuire à petits bouillons une vingtaine de minutes. A Noter : Pour obtenir une sauce rouge, supprimer l’anis et ajouter alors 1 piment sec rouge et une cuillère de poivre rouge.

KHO'BIZA à la Bel-abbésienne

Ingrédients : Pour 4 pers. 4 bottes de khobiza (feuilles et tiges de mauve). 12 olives façon Grèce (zitoun m'tamar). 6 gousses d'ail grossièrement hachées. 1 piment sec (sassafinda) débarrassé de ses graines et concassé. 4 cuillerées à soupe d'huile d'olive. 1 feuille de laurier. Sel, poivre.

Préparation : Laver à grande la khobiza, faire égoutter, puis hacher menu. Passer à la vapeur dans un couscoussier env. 15 m. Faire chauffer l'huile, 2 à 3 m., dans une casserole ou un faitout, réduire le feu, et commencer par y faire revenir le piment, l'ail, les olives et la feuille de laurier 2 à 3m., puis verser la khobiza par dessus. Bien mélanger couvrir et laisser mijoter à couvert 7à 8m. La préparation se mange chaude, tiède ou froide, comme un hors d'œuvre ou à "l'algérienne" en accompagnement de tout le repas, avec du pain d'orge de préférence.
